Q1: What is the fresh tomato to tomato paste yield ratio for your processing line?

A: The standard yield ratio depends on the Brix level of your raw tomatoes (typically 4.5–5.5°Brix) and your target product. For standard 28–30% Brix tomato paste, it takes approximately 5.5 to 6 tons of fresh tomatoes to produce 1 ton of concentrated paste.
